The Art of Omelet Making
Basic Recipe
Take 3 or 4 eggs for two people. Separate the whites from the yolks. Beat the whites first until foaming. Stir in the yolks. Season with salt. Grease the pan with butter and make it smoking hot. Pour in the beaten, seasoned eggs. In two minutes it is done.
Special Notes
1. Everything must be done quickly, otherwise the omelet will be hard and more like a pancake.
2. If you like wet omelets cook only about one and a half minutes and do not beat the eggs very much.
3. For a dry omelet, beat the eggs well and cook a little more.
4. For a foamy omelet, beat very well and cook two minutes.
Sweet Omelets
Sweet omelets were very popular in the eighteenth century. The only problem with them is that you need to leave the table to cook them from prepared ingredients, but it does not take more than 5 minutes.
Jam Omelet
4 egg yolk and 6 whites jam
Beat the egg yolks and the sugar together. Whisk the egg whites with a pinch of salt until quite stiff. Stir them into the yolks. Melt the butter in a pan. Cook for three minutes. Turn the cooked omelet on to a sugared paper and spread if lightly with hot jam. Fold it in half. Serve very hot. You will love it.
